Vineyards: Located in the heart of the Languedoc, near the Medievale Cité of Carcassonne and also the Canal du Midi, the vineyards of Pujol-Izard are worked in the respect of deep family traditions for the result of authentic cuvées.
Time to keep: 5 years Volume: 75 cl Capsule: Complex Cork: Natural Bottle: Bordelaise
Vinification: Manual harvest for the old Carignan and mechanical with embarked sorting for the reste. Vatted and yeasted. Vinified by each varietal to gain optimum maturity, and under controlled temperatures around 20 to 25°C. Maceration is long : 21 to 30 days following the tasting.
Land: Clay and limestone on sandstone. Zone of the «balconies of Aude». This grenache grows on the former site of a priory, that was built on a Roman villa of the 2nd century.
Characteristics : Wine warm and flattering to the aromas of red fruits and sweet spices. Nice density for this Mediterranean varietal by excellence. It is bold and round. This wine is to be drunk within five years. Raspberries and blackberriy flavours. A complex wine: «c’est une gourmandise !»
Accompaniment: Serve at 17°C with roasted or grilled meat.
